The recipes sound good, but as someone else mentions oven-canning is not recommended as a safe way to can at home. I didn't realize this until reading the other person's comment and doing some research on my own.

I am always fascinated how books like this get published. The 'preservation' techniques shared are not considered safe by today's standards...canned foods must be processed by waterbathing or pressure canning period. Steer clear.
